RAVINES CABERNET FRANC

Appearance:

Ravines Cabernet Franc pours a medium ruby with subtle garnet highlights. The clarity is bright, reflecting a fresh and vibrant style, typical of cool-climate Cabernet Franc.

Aroma (Nose):

The nose is expressive, featuring red and black fruit aromas such as raspberry, cherry, and blackberry. It is complemented by signature herbal and vegetal notes like green bell pepper, dried herbs, and a touch of green tea. Subtle earthy undertones of forest floor and wet stone add depth, while faint hints of spice—like black pepper or clove—emerge with aeration.

Palate (Taste):

On the palate, the wine is medium-bodied with lively, crisp acidity that provides energy and balance. The red and dark berry fruits from the nose continue, layered with herbal and vegetal notes. The tannins are smooth and well-integrated, offering structure without heaviness. Nuances of tobacco, lightly toasted spice, and a gentle mineral quality contribute to complexity and harmony.

Finish:

The finish is clean, persistent, and slightly savory, leaving a lingering impression of red fruit, herbs, and subtle earthiness. The wine maintains a bright and refreshing character throughout, making it approachable yet nuanced.

Food Pairing:

Ravines Cabernet Franc pairs exceptionally well with roasted or grilled meats, lamb, tomato-based pasta dishes, charcuterie, and medium-firm cheeses. It can also complement dishes featuring mushrooms or earthy vegetables. Serving slightly below room temperature highlights its aromatic freshness and crisp structure.

This wine is a great example of Finger Lakes Cabernet Franc: vibrant, expressive, and elegant, emphasizing freshness, herbal complexity, and a balanced fruit-driven profile rather than heavy oak influence.
